Gastronomic Science 饮食科学

Designed to complement conventional practical cooking workshops, Gastronomic Science is a theory-based course that highlights the principles and philosophy behind the design of gastronomically enticing dishes. Participate in food prep experiments during class that will offer you greater appreciation and understanding of food preparation in different ways.

Note: Gastronomic Science is a theory-based course and not a cooking class.

Learning highlights:

  • The fundamental qualities of delectable foods (and how to predict whether a food will taste yummy by just looking at the ingredient list!)
  • The distinction between healthy and comfort foods (and how to convert healthy food into comfort food, and comfort food into healthy food)
  • Food combinations that heal or harm the health and taste (and how to make predict food compatibility)
  • Creation of healthy and tasty gourmet foods (while encompassing all 5 senses, 6 tastes, cultural background and emotional ties)


饮食科学这门学问是为了对美味餐饮有兴趣的人们所设办的。饮食科学理论基础课程强调美味餐饮的原则和哲理,并且在课程当中会有实验示范,以展现食物料理的欣赏和衬托出不同料理的差异。

注:饮食科学是理论课,并烹饪班。

课程纲目:

  • 美食的基本条件 (学习如何按食材成份来预计食物的美味程度)
  • 健康饮食和舒适食物的印记 (学习如何在健康食物和舒适食物之间交替)
  • 养生食物与残害食物配搭 (学习如何鉴别良性与恶性食物配搭)
  • 创造健康美食 (贯穿五官、六味、文化与情感来创造独特菜肴)
